Low Carb Pizza

It’s National Pizza Day! Now if there has ever been a holiday that I can get behind, this one is it. (For the record, Feb. 18th is National Drink Wine Day!) You will probably agree with me that the crust is the best part, right? However, crust is not an option on my low carb eating plan. I put together this recipe and I have to tell you, it was SO good that I didn’t even grieve for the crust! Here’s my recipe…

1 lb. ground hamburger meat

1/2 jar Rao’s marinara sauce

2 c. shredded cheese (I used Fiesta Blend)

1/2 bell pepper, diced

Banana Peppper slices

4 oz. sliced mushrooms

Pepperoni Slices

Italian Seasoning

Preheat oven to 400. In a cast iron skillet, I browned the hamburger meat. Add 1 c. of the cheese and mix it well with the ground hamburger. Flatten this mixture into a “crust”. Spread the marinara over top of this layer. Layer with your peppers and mushrooms. Cover with remaining cheese and then top with pepperoni. Sprinkle with Italian Seasoning. Bake for 20 minutes, or until cheese is melted.
